8 lamb forequarter chops
200g orange marmalade
40ml sweet sherry
½ tsp black pepper crushed
Mix sherry, marmalade and black pepper together in a bowl
Place chops in the marinade and coat generously
Set aside to marinate for approximately six hours
Place chops on a hot grill for 3 minutes each side to achieve a good charring effect
Set aside to rest for three minutes before serving
Don't forget to bring the lamb to room temperature before grilling for best results
