900g pork belly ribs
100g orange marmalade
100g sweet chili sauce
20ml bourbon
Mix marinate ingredients together in a large bowl
Add ribs to marinade and leave to marinate for approx 6 hours
Colour your ribs over direct heat for a few minutes each side
Move to the back of the BBQ and continue cooking for approx 30 minutes, away from direct heat, turning every 5 minutes until cooked
Do not marinate for longer than 8 hours, as the mixture can start to chemically cook due to the bourbon; leave out the bourbon if you wish to marinate overnight
